Thanks for your analogy. I suspect that you are correct. Joys of having the cameras built into the tables huh. In summary though, the percentages should not take into account the folded (hidden) cards. It would be a lot different if the active players were able to see these percentages. I still do not feel that its proper for the percentages to take into account folded cards.
